Paleo Candied Pecans!

Here’s a great looking “sometimes paleo” recipe to splurge with during the holidays!  From the kitchen of Paleo Mama!

Paleo Candied Pecans!

Ingredients:

1 lb or roughly 4 cups of pecan halves

1 egg white

1 tbs water

2/3 cup honey

1/2 tsp sea salt

1/2 tsp ground cinnamon

Directions:

1. Preheat oven to 250.

2.  Line a cookie sheet with parchment paper.

3.  In a large bowl, put in egg white and water.  Using a fork or whisk, beat together until it is frothy.

4.  Dump in pecans and stir until they are completely coated.

5.  In a measuring cup, combine honey, salt, and cinnamon and carefully stir to combine.

6.  Pour honey mixture over nuts and stir to combine completely.

7.  Dump contents of bowl onto cookie sheet and using a rubber spatula, press into a single layer.

8.  Bake for about an hour to an hour and a half, stirring every 15 minutes.

9.  Pull nuts out of oven, and put them onto a glass baking dish to cool (if they cool on the parchment, they will stick).

10.  Once cool, break up and store in zip top bags at room temperature.

1 banana

Add the banana, apples, grapes, raspberries, stevia, water and ice into the blender in that order. Blend on low for 15 seconds. Then blend on high until smooth. Enjoy! Serves 1-2

Avocado Nut Smoothie

1 medium avocado, peeled and pitted

2 tablespoons cashews, raw

1/2 teaspoon stevia (or 1 tablespoon honey)

1 tsp vanilla

1 cup water

6 ice cubes

Blend the avocado, cashews, stevia, vanilla, water, and ice together until smooth. Serves 1-2

Pina Colada Smoothie Recipe

1 large ripe banana, peeled and sliced

1 cup mango, frozen

1 cup pineapple, fresh or canned

1/3 cup coconut milk

1 packet of vanilla stevia

1 1/3 cup of pure water

5 large ice cubes

To start with, pour water and coconut milk into the blender. Second, place the banana, pineapple, and stevia on the bottom with the frozen fruit and ice on top. Blend on low for 10-20 seconds. Then raise the speed to medium/high until creamy smooth.

Orange Cantaloupe Smoothie

1/4 cantaloupe, large and ripe

1 orange, peeled and seeded

1 banana, frozen

5 ice cubes

1/2 teaspoon stevia

Place all of the fresh ingredients closest to the blade with the frozen ingredients on top. Blend until smooth. Serves 1-2

Pineapple Smoothies

Ingredients

1 1/2 cups unsweetened pineapple juice

1 cup 1% buttermilk

2 cups ice cubes

2 (8 ounce) cans unsweetened crushed pineapple

1/4 cup sugar

Directions

1.Combine all ingredients in a blender or food processor; cover and process until smooth. Pour into glasses; serve immediately.

Green Smoothie Goodness

Yet another green smoothie with a distinct flavor. Mixing pear and banana is one thing you will find is really a delicious and wonderful flavor mixture. You won’t actually taste the kale, nevertheless, you will still have the benefits.

Ingredients:

-2 bananas

-1 Gala apple

-1 pear

-1 cup of kale

-1/2 cup water

FYI…this recipe calls for quite a bit of salt and 2 beef stock cubes…not paleo, so you will need to omit or substitute your own ingredients for this.

INGREDIENTS

1 Beef Tongue

1/2 cup Cooking Salt

2 cups White Vinegar….(I personally would go for apple cider vinegar)

1 tsp Barbecue Seasoning

1 tsp Cloves

2 Beef Stock Cubes…(I make my own stock)

METHOD

Place the beef tongue in a large pot. Cover with cold water. Add 1/4 cup cooking salt and 1 cup vinegar. Place in the fridge and leave to soak overnight.

Remove ox tongue from fridge and drain. Rinse under cold water. Put back in pot. Cover with water. Add 1/4 cup cooking salt and 1 cup vinegar. Place over heat. Add Smokey Barbecue Seasoning and cloves. Crumble the stock cubes into the pot. Bring to the boil, stirring occasionally. Reduce heat and simmer over low heat for 4 hours.

Remove ox tongue from pan – if cooked sufficiently the outer skin should peel away from the tongue easily leaving your cooked ox tongue finished and ready to serve.

How to Cook Lobster Tails Like a Chef

3. As soon as the water has attained a fierce boil, lower the tails in and boil for 4 minutes.

4. Drain the tails and align them on their backs once they have cooled slightly.

5. Using a razor-sharp chef’s knife, break the soft top shell of the tail, lengthways down the center, but leave the hard shell beneath in tact.

6. Put some melted butter and lemon juice over the meat of the tails or brush a marinade of lemon juice, olive oil, salt and pepper, garlic powder and paprika over the meat and position the shell side down into a pre-heated grill.

7. Grill for something like 7 – 8 minutes under a medium - scorching heat or until the meat is opaque, no longer clear and firm to the touch.

8. If you wish, you may turn the tails over 50 % way through cooking.

9. Once the lobster tail is ready, serve it with lemon, mayonnaise or melted butter..

How to Cook Lobster Tails ~ BBQ Lobster Tails Instructions

1. Start with a sizzling grill; either gas or charcoal works well.

2. Coat the tail meat with melted butter.

3. Put on the grill meat side up to start.

4. Cook for 5 minutes.

5. Coat with additional butter.

6. Flip, and cook for 5 minutes with the meat facing down.

Bear in mind to take out the meat from the shell just before grilling and marinate it with your bbq sauce and then restore the meat in the shell and grill it as usual. It is also suggested to stick a skewer through the midsection of the tail meat to reduce it from curling.

However,  if you are like me, you’ve tried  many times and only occasionally got it right… the recipe below will ensure you have EASY TO PEEL eggs every time!!

RECIPE FOR PERFECT HARDBOILED EGGS

  1. Start by placing the eggs in a pot of COLD water Be sure there is a minimum of an inch of water above the top of each egg. The idea is to stabilize the temperature between the water and eggs.
  2. Bring the pot of water and eggs to a boil by placing them on high heat . After the water is boiling steadily, immediately take the pot off of the heat and cover with a tight-fitting lid . The eggs will continue to cook from the heat of the water.
  3. Let the eggs sit in the pan in the hot water for 12 minutes for medium eggs, 15 minutes for large eggs and 18 minutes for extra large eggs. USE A TIMER! After your timer goes off, drain water and replace with ice cold water. Let the temperature between water and eggs stalilize again and you’ll have the perfect BOILED EGGS! Now, enjoy your healthy snack and give yourself a pat on the back for cooking the perfect, incredible, edible, weight loss snack!

As a final note, I have been noticing, on many weight loss blogs, that there are concerns about regular consumption of eggs. Studies have shown that daily consumption of eggs will not cause an elevation of cholesterol or heart disease risk. Most cholesterol problems can be linked to excess carbohydrate intake rather than excess cholesterol consumption. So, go ahead, enjoy your eggs!

Paleo Breakfast and Paleo Snacks – Mini Quiche

paleo breakfast mini quicheHere is a great idea for a tasty paleo breakfast- Mini Quiche….  Great for those rushed mornings when there is not enough time to eat a proper paleo breakfast.   This recipe will make 12 Mini Quiche.    Make up a batch of these and you’ll be set for a few days.    I made mine with cupcake cups ala muffin-style.   Very portable for snacking later!   I found this great recipe on LeanMachineNYC.com.

Ingredients:
A dozen eggs
Chopped vegetables
Chopped cooked meat
Splash of water (for fluffiness)
Salt & Pepper

You’ll also need:
A pitcher
A non-stick muffin tin

Preheat oven to 350 degrees

Chop a variety of vegetables such as spinach, broccoli, asparagus, roasted red peppers, mushrooms, sundried tomatoes, etc. Anything you have on hand will work.

If you choose to use meat, such as bacon, cook it first.

Break the eggs into a pitcher. Add a splash of water and season with salt and pepper. Mix well.

Pour a small amount of the egg mixture into the muffin tin (fill each about 1/3 full). Sprinkle the meat and vegetables of your choice into the tin and then cover with more egg mixture.

Cook for 15-20 minutes and then let them rest for 5 minutes before removing from the tin.

Paleo Diet Alcoholic Beverages

What is the Paleo beverage of choice for the Super Bowl?  Well, beer is not paleo, and gluten-free beer is not paleo.  According to CrossFit Portland’s Paleo Challenge, these are the alcoholic beverages that are ok to consume:

1) Red or White Wine

2) Nor Cal Margarita 1-2 shots of tequila, squeeze of lime, salt on the glass, soda water.

3) Vodka with a squeeze of orange and soda water

4) Gin with soda water

5) any non-sugar beverage you can create

6) No Tonic Water! Soda water is ok.

With alcoholic beverages, its your choice as to what level of paleo commitment you want to have.   For me, alcohol in moderation and on special occasions is ok.  My philosophy is that its ok to occasionally indulge in those things that make life fun and worth living.  Even though he had no beer, Paleo man sought happiness, too!

Broccoli and Pine-Nut Soup

Ingredients

1 onion, diced
1tbs oil
3 cups broccoli
3 cups chicken
or vegetable stock
¼ cup pine-nuts


Instructions

Fry onion in a large pan with oil on medium heat until slightly browned.

Add broccoli and stock and simmer for 10-15minutes or until broccoli has softened. Cool slightly.

Place in a food processor or use an electric blender to form a smooth texture.

Heat to serve.
