Paleo Diet Recipes-More Than Just Salad and Chicken

Let me just start out by saying that the Paleo Diet has been a big deal for me.   I am a believer in this way of life and eating and have been experimenting with and collecting various paleo diet recipes.   I have been eating this way since early 2009 and very rarely fall back to eating neolithic. Well, maybe a little pumpkin pie at Thanksgiving and other special occasions.  Other than that I pretty much stick to paleo.  The good news is that there are some really tasty paleo diet recipes that make pretty awesome desserts.

But for now, here is one of the first paleo diet recipes I ever made. Its a very basic recipe, and one that I prepare quite often. Here are the ingredients for The Basic Paleo Pancake breakfast:

1 cup almond flour (finely ground and blanched is best)
3 eggs
1/4 tsp vanilla extract
1/4 tsp cinnamon
blueberries or diced apples (optional)

Mix all ingredients together, and cook the pancakes as usual.  I cook them in safflower oil.  This recipe makes about three or four 5″ diameter pancakes. Adjust the quantities proportionally if you need to make a bigger batch.

Sometimes, eating paleo can be challenging. The diet itself is very basic, but creating delicious meals can sometimes be difficult, especially if you are in a hurry. All of the recipes are gluten-free, preservative-free, and dairy-free.  Each recipe comes with a full color photo so you can see what the meal looks like.

I try to eat paleo as much as I can, but on occasion will revert to eating neolithic…like at Thanksgiving and Christmas. I’m fine with that!  However, I don’t nearly eat as much pie and desserts as much as I used to before I started living the paleo lifestyle.   The great news is that I have just discovered some new paleo pumkin pie recipes and will be trying these soon.

The thing about living paleo is that it might take a little while for your body to adjust.  At first, you may feel lethargic or tired.  This is just your body going through detox and it is normal.  It will soon pass and you will be on your way to feeling like superman in no time.
